Ingredients

- 1.5 lb (680 g) kielbasa sausage, cut into 1-inch pieces
- 2 lb (900 g) potatoes, cut into wedges

- 1/2 cup (120 ml) sour cream

Instructions

1. Preheat oven to 425°F (220°C). Arrange potato wedges and kielbasa pieces on a large rimmed baking sheet in a single layer, leaving space for the onions.
2. Scatter the sliced onions among the potatoes and kielbasa. Place the sheet in the oven and roast 20 minutes.
3. Remove the pan, stir and turn the pieces so they brown evenly, then return to the oven and roast another 15–20 minutes until potatoes are tender and edges are browned and onions are deeply caramelized.
4. Transfer to a serving platter and serve with sour cream on the side for dipping.
