- 8 flanken-cut beef short ribs, approx. 4 oz (115 g) each - 1/2 cup (120 ml) soy sauce - 1/4 cup (60 ml) brown sugar - 1/2 cup (120 g) grated Asian pear or ripe pear - 3 tbsp (45 ml) mirin or rice wine - 2 tbsp (30 ml) toasted sesame oil - 4 cloves garlic, minced - 1 tbsp (15 ml) grated fresh ginger - 3 green onions, thinly sliced - 1 tbsp (15 ml) sesame seeds, toasted - 1/4 tsp (1.25 ml) black pepper - 1 tbsp (15 ml) neutral oil (for grilling)
1. Whisk together soy sauce, brown sugar, grated pear, mirin, sesame oil, minced garlic, grated ginger, sliced green onions, sesame seeds, and black pepper to make the marinade. Place flanken-cut ribs in a shallow dish or zip-top bag, pour marinade over ribs, press to cover, and refrigerate 4 hours to overnight. 2. Remove ribs from marinade to room temperature and pat lightly (reserve marinade to baste or discard). Heat grill or cast-iron pan to very high heat and oil the grates. Grill ribs 2–4 minutes per side (depending on thickness) until caramelized and charred at the edges. Rest briefly and serve whole or sliced.
